For preparing the Aam Launji, you require the following ingredients.
(1) 5 medium Raw Mangoes (Kairi) (You should peeled the mangoes and cut them into cubes)
(2) 1 tsp Fennel Seeds (Saunf)
(3) 1/2 tsp Onion Seeds (Kalonji)
(4) 1/2 tsp Cumin Seeds
(5) A pinch of Asafoetida
(6) 1/2 tbsp Turmeric Powder
(7) 2 tbsp Oil
(8) Salt to taste and 5 tbsp Sugar
Procedure – You should take a pan and boil five cups of water. Then you should add salt, turmeric powder, mango pieces, and half the sugar. This should be followed by blanching till it is over. Then you should drain the mangoes and keep them aside. Now, you should take some oil in pan and hear it. You should add cumin seeds, fennel seeds, onion seeds and asafoetida. You allow it to splutter and then add the mango pieces to the spices. You can adjust the seasoning and sugar as per your preference. You can cook for few minutes and spoon out the Launji into dish which you can use to serve.

(2) 21/2 cups Milk (chilled)
(3) 1 cup powdered Sugar
(4) 1/4 teaspoon Saffron
Procedure – You should peel all the mangoes and chop them into cubes. Then you can add these mango cubes, milk, sugar and saffron in a blender till it gets smooth. You can pour the mixture into small bowls and serve it chilled. You can also add ice to the mixture if required.
